Spicy fried chicken – khao phad gai

I love Thai food and fried rice with chicken is a dish I choose many times, even though it is not spicy. I generally prefer hot dishes and of course the Thai kitchen has a lot to offer in that department. This is my version of the Khao Phad Gai and I have added chili, and the tasty herb Cilantro that also goes by the names Coriander and Chinese parsley. As an addition you can add chopped peanuts and a savory soy dressing. My guests thought it was a success but if you're not into the burning sensation just reduce or completely omit the chili! This recipe gives four servings.

Ingredients

400 g of sliced chicken

4 garlic cloves, pressed

Plenty of butter for frying or oil if preferred

800 g cooked Jasmine rice (this is not its dry weight)

1 yellow onion, chopped

3 scallions, thinly sliced ​​

1 dl cilantro, finely chopped

1 hot red chili, chopped

2 carrots, cut into thin coins

2 tbsp fish sauce

4 tablespoons Thai mushroom soy

Roughy ground black pepper

3 organic eggs (lightly beaten)

Extra cilantro for garnish

Directions

Fry the chicken in plenty of butter with onions, chili, garlic, black pepper and carrots. Fry them until the chicken is cooked through. Then add the cooked rice and drizzle with fish sauce and soy sauce. Stir until it is well mixed and until all of the rice has received the color and taste of the soy sauce. Then slide the rice to the sides of the pan and form a hole in the middle. Pour the beaten eggs there and stir until it becomes soft scrambled eggs. When the eggs begin to feel ready, pour coriander and spring onions and mix it thoroughly with the rice. Now it's ready to serve, preferably with the following accessories.

Optional condiments

  • Chopped salted peanuts

  • Thai sweet chili sauce

  • Strong soy dressing/dip (recipe below)

Soy Dressing

1 tbsp fish sauce

1 tbsp lime juice

3 tbsp light soy thai

1 tsp sesame oil (easily takes over so don't use to much)

1 tsp dark soy sauce

1 thinly sliced ​​red chilli

1 crushed/pressed garlic clove

Mix together all ingredients and serve in small serving bowl next to the other condiments, and the fried rice. This dip has some other influences because of the addition of sesame oil. It is obviously a matter of taste if you want it, so by all means, experiment! I think they go very well together.
